fig & banana bread

Deliciously dense banana bread, the figs turn chewy & caramelised when cooked.
Recipe is vegan, gluten & dairy free x

INGREDIENTS:
2 bananas (mashed)⁣⁣
1 tbsp flaxseed (mixed with 3 tbsp water)⁣⁣
3 tbsp coconut oil⁣⁣
3 tbsp maple syrup⁣⁣
1 tbsp vanilla essence⁣⁣
2 cups almond flour/ground almonds ⁣⁣
1 tsp baking powder⁣⁣
1 tsp cinnamon⁣⁣
7 chopped dried figs⁣⁣
5-6 walnuts
⁣⁣
METHOD:
+ Preheat oven to 180 degrees celsius.
+ Make flax egg by mixing together flaxseed and water, then set aside.⁣⁣
+ Mix together mashed banana, coconut oil, maple syrup & vanilla essence until thoroughly combined.⁣⁣
+ Stir in flour, baking powder & cinnamon.⁣⁣
+ Lastly add in the chopped figs. ⁣⁣
+ Press the mixture into a lined baking tray, sprinkle with walnuts + more chopped figs (if you wish).
+ Bake for 45 mins until the bread is golden brown.
+ Leave to cool before removing from baking tray.
